Ingredients

Mixed vegetable guacamole salsa

  • 2 avocados
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1/8 onion
  • 1/2 tomato
  • 1 tsp Lime juice
  • 1/4 tsp Red pepper flakes Or to taste
  • 1/4 tsp Garlic powder
  • pinch Salt Optional

Seasonings for Rice

  • 1 tbsp Nutritional yeast
  • 1/2 tsp Chipotle pepper
  • 1/2 tsp Smoked paprika
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/4 tsp Cumin
  • 2 tsp Soy sauce

Instructions

  • Cook rice or start with leftover rice. Add the cooked rice to a frying pan with a small amount of oil or water to keep it from sticking. Heat on low-medium heat.
  • While rice is heating, chop vegetables until the desired consistency is reached. For chunky guacamole salsa, dice the vegetables. Mince the vegetables for a fine texture, or blend for smooth guacamole. 
  • Place the chopped vegetables in a bowl and mix with the guacamole salsa seasonings.
  • Add the rice seasonings to the rice, and stir thoroughly.
  • Top individual servings of seasoned rice with guacamole salsa and serve. The hot rice and cool salsa are a pleasing combination.
