Cook rice or start with leftover rice. Add the cooked rice to a frying pan with a small amount of oil or water to keep it from sticking. Heat on low-medium heat.
While rice is heating, chop vegetables until the desired consistency is reached. For chunky guacamole salsa, dice the vegetables. Mince the vegetables for a fine texture, or blend for smooth guacamole.
Place the chopped vegetables in a bowl and mix with the guacamole salsa seasonings.
Add the rice seasonings to the rice, and stir thoroughly.
Top individual servings of seasoned rice with guacamole salsa and serve. The hot rice and cool salsa are a pleasing combination.
