Toast and Tomato Sandwich

A toast and tomato sandwich is one of the quickest and easiest healthy meals when you are in a hurry. When I am looking for a meal that will be ready in 5 minutes, this is what I make.

Ingredients

  • 2 slices Bread
  • 1/2 Tomato Roma works well
  • 1 tsp Vegan margarine
  • Pepper or other seasonings to taste

Instructions

  • Toast the bread. While bread is in the toaster, slice a tomato into thin slices.
  • When the toast is ready, add your desired spread. The sandwiches can be made with no spread, or use your spread of choice (such as vegan margarine, mashed avocado, or hummus). 
  • Add 1 or 2 layers of thinly sliced tomatoes (or more, if desired).
  • Add pepper or other spices to taste, and serve immediately.

Notes

Avoid letting these sandwiches sit for long. They should be eaten as soon as they are prepared, otherwise the tomatoes make the bread soggy.
