Quick Vegan Biscuits

These quick vegan biscuits are healthy and very easy to make. They have simple ingredients and only a small amount of oil. Ready in about half an hour.

Ingredients

  • 1 cup flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 cup soy milk

Instructions

  • Mix dry ingredients (flour, baking powder, and salt) together.
  • Drizzle olive oil over the dry ingredients and stir to create a crumbly dough.
  • Add soy milk. Stir and knead to combine. Handle as little as possible. Stop kneading as soon as the ingredients are barely mixed, about 20 seconds.
  • Roll out with a rolling pin until about 2cm thick. Cut the dough into 12 squares and bake to make 12 square biscuits. You can separate the dough into individual biscuits before cooking, or leave the biscuits connected and separate them after baking.
  • Bake at 350 or 375 in a convection oven for 20 - 25 minutes until slightly browned on top. Use the higher temperature (375 degrees) in a non-convection oven. Serve these biscuits hot or cold.
