Quick Vegan Biscuits: Easy and Healthy

These quick vegan biscuits are very easy to make. They have simple ingredients and only a small amount of oil. They taste just as good as their less healthy counterparts.

Home made biscuits always make a meal seem fancier. It looks like you went to great effort to make a nice meal when you bake fresh biscuits as a side dish. Because these biscuits do not take long to make, you can bake them while preparing the rest of a quick meal. Or you can have biscuits as a snack; from start to finish they will take about half an hour.

Ingredients for Quick Vegan Biscuits

1 cup flour

1 tbsp baking powder

1/4 tsp salt

2 tsp olive oil

1/2 cup soy milk

Directions

Mix dry ingredients together. Use a whisk to ensure the flour, baking powder, and salt are well mixed and evenly distributed.

Drizzle olive oil over the dry ingredients and stir to create a crumbly dough. Just stir briefly; do not over mix.

Add soy milk. Stir and knead to combine. Handle as little as possible. Stop kneading as soon as the ingredients are barely mixed. This takes about 20 seconds.

Use a clean surface lightly covered with flour to keep the dough from sticking when you roll it out. I like to use a silicone baking sheet.

Roll the dough out with a rolling pin until it is about 2cm thick. Cut the dough into 12 squares and bake to make 12 square biscuits. A large knife works best to cut the dough; just make sure you have moved the dough onto a cutting board so you do not cut into your countertop or silicone baking sheet. You can separate the dough into individual biscuits before cooking, or leave the biscuits connected and separate them after baking. If separating the biscuits before cooking, leave a bit of space between each one; about 3 cm works well.

Bake at 350 or 375 in a convection oven for 20 – 25 minutes until slightly browned on top. Use the higher temperature (375 degrees F) in a non-convection oven. Serve these biscuits hot or cold.

These biscuits pair well with savoury or sweet dishes. You can top them with vegan margarine or coconut oil for a savoury biscuit. Try whipped coconut cream and fruit for a dessert biscuit.
