Low Fat Protein Muffins
Quick and easy vegan mini muffins made from simple ingredients. These muffins are low fat and high protein.
Servings: 12 mini muffins
Ingredients
Dry Ingredients
- 1 cup flour
- 2 tsp baking powder
- 1/2 cup protein powder strawberry soy protein
- 1.5 tbsp sunflower seeds
- 1 tbsp flax seeds
- 2 tbsp dried cranberries
Wet Ingredients
- 1 tsp vanilla
- 1 tsp canola oil
- 1 tsp apple cider vinegar
- 1/2 cup soy milk
- 1/2 cup water
Instructions
- Mix together dry ingredients. Add wet ingredients to the dry ingredients and then mix together by stirring until ingredients are just incorporated. Top each muffin with 1/2 tsp brown sugar before baking (optional).
- Bake at 350 for 20 min. Makes 12 small muffins.
Notes
These muffins were made with strawberry flavoured vegan soy protein powder. If using unsweetened protein powder, add 2 tsp of sweetener (such as sugar or agave syrup). Alternatively, use half almond flour and half coconut flour plus 2 tsp coconut sugar instead of protein powder.
