Boil diced potatoes for about 25 minutes. Cool and mix with finely chopped red onions, vegan mayonnaise, lemon juice, balsamic vinegar, and spices (garlic powder, onion powder, pepper, dill, oregano). For a healthier version, use blended avocado instead of vegan mayo.
