If you are looking for a way to make easy instant vegan gravy, this method is the fastest. You don’t even need to cook anything – besides in the microwave – and the gravy will be ready in a just a few minutes. If you don’t tell anyone how you made it, no one will know the difference between this instant vegan gravy and any other brown gravy.
The ingredients are simple. Use vegetable broth, a bit of corn starch, flour, and soy sauce. Season with a bit of black pepper, and you have flavourful low-fat gravy. For a gluten-free gravy, use any gluten-free flour blend or rice flour instead of wheat flour to thicken the gravy.
Use any vegetable broth for this gravy. I prefer Better Than Bouillon Seasoned Vegetable Base, 1 teaspoon mixed with 1 cup of water. Use a large cup, measuring cup, or other heat-proof glass dish. Heat the vegetable broth in the microwave for 1 minute on high (or you can use the stovetop).
In a separate small cup, add 1 tsp corn starch and 3 tbsp flour. Corn starch makes the gravy a little bit gelatinous, which gives it that authentic gravy texture, and the flour makes it thick and more opaque.
To avoid lumps, it is important not to add the dry corn starch and flour to the broth by itself. Use a separate small cup to make a slurry. Spoon out some of the warm vegetable broth into the cup of corn starch and flour. Add about 3 tbsp of broth and stir to make a thick, smooth mixture. Keep stirring until there are no lumps. Pour this flour mixture into the large cup of warm broth. Stir well, until there are no lumps.
Add 1 tsp of soy sauce for extra brown gravy. Microwave for 1 more minute and then stir. The gravy should be thick and bubbly. If it has not yet thickened, microwave for 1 more minute. Once the gravy is thick and bubbly, sprinkle with black pepper, stir one more time, and it is ready to serve.
