A high-speed blender such as a Vitamix works best for this smoothie because frozen fruit can be challenging for regular blenders. If you are using a regular (non-high-speed) blender, you may need to add more liquid.
Make sure the fruit is cut into pieces before freezing. This ensures that the pieces are not too big for blending.
Berry Peach Smoothie Ingredients
Add frozen fruit to a large size blender jar, including:
- Blueberries 1/2 cup
- Strawberries 3/4 cup
- Peaches 3/4 cup
- Apples 1/2 cup
- 1/2 of a medium size banana
Add the following additional ingredients:
- 6 dates
- 1.5 tbsp vanilla extract
- 1 can coconut milk (optional)
- Soy milk (add soy milk until liquid comes 3/4 of the way to the top of the fruit; about 3/4 cup).
Operate the blender according to manufacturer directions. If using a Vitamix, turn the blender on, slowly increase the speed to the highest speed setting, and blend while using the tamper to move ingredients down to the blades. Blend for about 45 seconds or until the entire mixture is a smooth and uniform texture.
Serve immediately in glasses or bowls. This smoothie can be eaten with a spoon if you want; it will be too thick to use a straw. Makes about 3 servings.
