Now add thinly sliced tomatoes. I like to make these sandwiches with one or two layers of tomatoes. You can add as many layers of tomatoes as you like.
Season if desired. Pepper, basil, oregano, or a small amount of salt work well. I like to add just pepper.
To make the sandwiches fancy, I like to cut them in half crosswise, but it isn’t necessary to slice them.
Avoid letting these sandwiches sit for long. They should be eaten as soon as they are prepared, otherwise the tomatoes make the bread soggy.
A toast and tomato sandwich pairs well with soup or salad to make a larger meal. I often eat just a sandwich on its own for the fastest option.
Various modifications can be made to customize this sandwich, but I find that it is nice in its simplicity. Adding other ingredients changes the sandwich enough that it is no longer the classic toast and tomato, so I just make these sandwiches with minimal, simple ingredients. Keeping the ingredients simple also allows you to make this quickly. It is nice to have a meal ready in 5 minutes, with minimal preparation.

- 2 slices Bread
- 1/2 Tomato Roma works well
- 1 tsp Vegan margarine
- Pepper or other seasonings to taste
