Try a vegan bacon potato bake for your next potluck or meal. Potatoes and onions are a delicious combination. Add vegan bacon, and they are even better! These quick potatoes make a great side dish, perfect for potlucks and for serving both vegan and non-vegan guests.
The combination of sweet, salty, and smoky is a real treat.
Vegan Bacon Potato Bake Instructions
Potatoes
Dice the potatoes and bake for about 20 minutes at 425F in a convection oven, or 30 minutes at 450F in a regular oven. Save time by baking the potatoes while the onions cook (instructions below). You can coat the potatoes with oil first, but for a healthier, lower calorie option, I just bake them plain. I also like to leave the skins on for some extra vitamin C and other nutrients. Make sure to wash the potatoes well and cut out any blemishes first.
Onions
Meanwhile, heat 2 frying pans to prepare the maple onions and tofu bacon toppings.
Finely dice 1 medium onion and 5 cloves of garlic. Sauté in a bit of olive oil until browned. After 10 minutes, while maple onions and tofu bacon are cooking, stir the potatoes to turn them and ensure they cook evenly.
Sprinkle the onions with chipotle pepper (1/2 tsp). Add 2 tsp maple syrup, 3 tsp nutritional yeast, and 5 drops of liquid smoke. Stir thoroughly and sauté until all liquid is absorbed (45 to 60 seconds seconds). Turn off heat.
Tofu Bacon
At the same time as the onions are cooking, cook the tofu bacon in a separate frying pan. Crumble half a block of drained extra firm tofu (press the tofu in a clean kitchen towel to soak up extra moisture for faster cooking time). Stir fry the crumbled tofu on medium heat with 1/2 to 1 tbsp of olive oil until tofu pieces are browned on all sides and are starting to become crispy. Lower the heat to the lowest setting.
Add 4 tsp nutritional yeast, 2 tsp soy sauce, and 7 drops of liquid smoke. Stir thoroughly until all pieces are coated evenly and the liquid has boiled off and absorbed. Turn off heat.
Preparing the final dish
By now the potatoes will be nicely browned (they will have been cooking for about 20 minutes in the oven). Spoon the tofu bacon crumbles and maple onions over the potatoes. Add additional toppings if desired (such as vegan cheese shreds). Bake for an additional 2-5 minutes. Remove from oven and sprinkle with parsley, dill, and oregano, and the vegan maple bacon onion potato bake is ready to serve.
