Are you looking for something simple, quick, and tasty? Seasoned rice with guacamole salsa is an easy and health option.
Customize the salsa ingredients to your liking. If you are not a fan of tomatoes, leave them out. Use red, green orange, or yellow bell peppers – or all of these! For mild salsa, use simple, mild seasonings. For a spicy guacamole, add jalapeños or other spicy peppers. With endless customization options, you can have any type of guacamole. Sweet, sour, spicy, mild…it’s up to you.
This easy meal is a delicious way to use up left over rice, or you can make the rice fresh. I prefer parboiled rice for its firm, robust, yet chewy texture, but you can use any kind of rice for this recipe.
I used the following mixed vegetables for a nice, mild, guacamole salsa. Customize the salsa to your liking by changing the combination of vegetables.
- 2 avocados
- 1/2 red pepper
- 1/2 yellow pepper
- 1/8 onion
- 1/2 tomato
- Lime juice
- Red pepper flakes (add just a little for mild guacamole salsa, or more for a spicier version).
- Garlic powder
- Salt
Choose your preferred texture of guacamole salsa, and customize by chopping the vegetables accordingly. Dice vegetables for a chunky salsa, blend for smooth guacamole, or anything in between. You can even blend or mash the avocados and tomato, and add diced peppers and onions for a mixed texture.
Cook rice or use leftover rice. The recipe works well with fresh or leftover rice. Season rice with the following (also customize to your liking).
- Nutritional yeast
- Chipotle pepper
- Smoked paprika
- Garlic powder
- Onion powder
- Cumin
- Soy sauce
Top individual servings of seasoned rice with guacamole salsa for a quick and easy meal. The hot rice and cool salsa are a pleasing combination.

Seasoned Rice with Guacamole Salsa
Ingredients
Mixed vegetable guacamole salsa
- 2 avocados
- 1/2 red pepper
- 1/2 yellow pepper
- 1/8 onion
- 1/2 tomato
- 1 tsp Lime juice
- 1/4 tsp Red pepper flakes Or to taste
- 1/4 tsp Garlic powder
- pinch Salt Optional
Seasonings for Rice
- 1 tbsp Nutritional yeast
- 1/2 tsp Chipotle pepper
- 1/2 tsp Smoked paprika
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/4 tsp Cumin
- 2 tsp Soy sauce
Instructions
- Cook rice or start with leftover rice. Add the cooked rice to a frying pan with a small amount of oil or water to keep it from sticking. Heat on low-medium heat.
- While rice is heating, chop vegetables until the desired consistency is reached. For chunky guacamole salsa, dice the vegetables. Mince the vegetables for a fine texture, or blend for smooth guacamole.
- Place the chopped vegetables in a bowl and mix with the guacamole salsa seasonings.
- Add the rice seasonings to the rice, and stir thoroughly.
- Top individual servings of seasoned rice with guacamole salsa and serve. The hot rice and cool salsa are a pleasing combination.
